April Fool’s Dinner

Chicken Nuggets:

Arrange peanut butter log candy on a plate to look like chicken nuggets

Great Green Beans:

Cut a green Jolly Rancher Fruit Chews candy into four pieces. Microwave on a paper towel for 7 seconds or until slightly softened, then roll each candy piece between your palms to form a thin snake for a bean's center. For the outside of each bean, soften a whole candy in the microwave (10 seconds). Stretch and flatten it into an elongated oval and trim each end to a point with kitchen shears. Place a bean center on the candy oval, then press together the edges of the outer bean.

Ice-Cream Potatoes:

A scoop of vanilla ice cream or frozen yogurt makes for convincing mashed potatoes. Set a helping on each plate and top with butterscotch or caramel sauce gravy just before serving.

April Fool's Punch:

Dissolve a package of dessert gelatin according to the directions on the box (orange to look like iced tea; raspberry, strawberry or lemon to resemble fruit punch). Pour the liquid gelatin into drinking glasses, then place a plastic straw in each. Set the glasses on a tray in the refrigerator until the gelatin firms up.

Colorful Cupcakes (really meatloaf):

Ingredients:

· 1 pound lean ground beef
· 12 cup seasoned bread crumbs
· 1 cup grated Monterey Jack cheese
· 3 tablespoons ketchup
· 1 egg
· 1/2 teaspoon celery salt
· 1/4 teaspoon pepper

Potato Frosting:

· 3 cups mashed potatoes
· Food coloring

Heat the oven to 375 degrees. Line 12 muffin tin cups with foil bake cups. In a large bowl, mix together all of the meat loaf ingredients until well combined. Divide the mixture evenly among the lined cups (the liners should be about three quarters full). Place the filled muffin tins on cookie sheets and bake the cupcakes for about 15 minutes or until cooked through. Divide the mashed potatoes among three small bowls and stir a few drops of food coloring into each batch to create blue, yellow, and pink pastel frostings. Spread a generous dollop on each cupcake. Makes 12 meatloaf disguised cupcakes.
