Great Tips for Great Soups
by Michele Cooking-guru
Winter in Wisconsin. Who couldn't love it? Beautiful white snow, ice skating, skiing, snowmobiling. With that cold crisp air though, you need something to warm you up.
After a day of play in the snow, we need hot soup to warm us up. Sure, you can buy a store bought brand and have it to the table in a matter of minutes. But wouldn't you like to make a large pot and smell the aroma through out your home?
An easy tip to bring out great flavor in your homemade soup is to add canned chicken or beef broth instead of adding the water. What if you don't have broth? Try adding bouillon cubes with the water. Or add a can of creamed soup, like Cream of Mushroom.
One more trick for making great soup. Never throw away your bones from your roasts, or poultry. Even if most of the meat is off, just put them in a pot of water, add some seasonings, and simmer for a while. This broth makes a great start to a pot of homemade soup.
Helping your homemade soup's flavor is easy with these shortcuts.
Beef Vegetable Soup
1 LB ground beef
1 sm. onion chopped
1 stalk celery chopped
1 lg. can beef broth
1 sm. can diced tomatoes, undrained
3 potatoes cut in chunks
Veggies, fresh or frozen or canned*
Seasonings to taste (salt, pepper, fresh or dried
herbs)
Put ground beef, onions and celery in pot. Cooked
until ground beef is browned. Drain. Add beef broth
and tomatoes. If you need more liquid, you can add
water. Add potatoes and fresh vegetables cut into
pieces. (If you are using frozen or canned, you can
wait to add until potatoes are almost done.) Add
seasonings. It's ready when the potatoes are tender,
or simmer for awhile longer for flavors to blend more.
Again, you really can't make any mistakes on this
soup. Add as much or as little of ingredients as you
want. Try adding barley, rice or noodles instead of
potatoes. Be creative.
*Use your favorites - corn, peas, beans, carrots,
mushrooms, and beans.
