Monday
Salmon Aleyeska
Broccoli
Crusty Bread
Store bought Pie

1lbs. fresh salmon, cooked, skinned and boned or 1 can of salmon
1 cup of uncooked rice
1/2 cup sour cream
1/4 cup mayonnaise
1/2 minced onion
1tbsp. lemon juice
1 tsp. salt
1/4 tsp. tarragon
dash of cayenne pepper
4oz. shredded cheddar cheese

Cook rice according to directions. Divide and spread over bottom of baking dish. Set aside. Combine sour cream, mayonnaise, minced onions, fresh lemon juice, salt, perpper and tarragon. Mix well. Spread half over rice and spread all the salmon evenly over the sauce. Pour the remaining sauce over the top of the salmon.

Preheat oven to 400F and bake one hour ...check in 45 minutes. Don't forget to cook broccoli in microwave about 15 minutes before you serve dinner.

Tuesday

Chicken Pot Pie
Celery stix
Ice Tea

1 lb. chicken breast (boneless skinless)
1 can cream of mushroom soup
1/4 tsp. thyme
1 pkg. of frozen mixed vegies
chopped onion (1/4)
Pillsbury Pie dough already prepared
salt & pepper to taste

Saute chicken on top of stove in skillet for about 15 minutes till done. Cut up in bite size pieces. Add soup and vegies. Stir well. Sprinkle thyme, a little salt and pepper. Place first pie dough layer in pie pan. Pour in chicken mixture and cover with top layer of pie dough. Make several slits in crust. Preheat oven to 425 F. Place pie on cookie sheet and bake for 10 minutes ..lower heat to 375 F and bake 30 minutes..checking to see if finished.

Wednesday

Baked Ziti and Sausage
Pkg. of prepared salad and favorite dressing
Tomatoes cut up for salad

2 cups of uncooked pasta
1 lb. Italian sausage hot or sweet
1/2 chopped onion
1clove garlic minced
1 jar of your favorite pasta sauce
4 oz. shredded mozzarella cheese
1/4 tsp. basil and oregano
freshly grated pepper

Prepare pasta according to pkg. directions. Drain pasta and rinse with water. Set aside. Slice sausage in 1/2 inch slices and brown in skillet...or cook whole in microwave and then sliced. Drain and reserve 1 tbsp. of fat. Use fat to cook onions and garlic for a few minutes. Pour some pasta sauce in a 9x9 aluminum baking pan. Spread sausage, sauce, onions, garlic and herbs. Top with mozzarella. Preheat oven to 350 degrees and bake for 35 minutes.

Thursday

Beef and Broccoli
Buttered Noodles
Orange wedges

Cut sirloin steak into thin strips
2 tbsp. teriyaki sauce or soy sauce
Fresh brocoli flowerets
1 clove of garlic
1/2 onion cut in squares
1/4 cup water

Boil noodles...strain and set aside. Cut up steak and sprinkle lightly with soy sauce or teriyaki. Saute in oil in fry pan a little at a time. Remove meat and now saute onions, now add broccoli and saute. Stir broccoli, meat, onion and garlic. Sprinkle flour over top and stir in water ...cook a minuter or two. Serve over noodles.

Friday

Oven Fried Chicken
Store Cole Slaw
Tomatoes cut up with dressing

1 pkg. chicken legs or thighs
1/2 cup Bisquick Mix
1/4 cup parmesian
1 tsp. Italian Herb mix...basil, oregano, thyme, garlic
salt and pepper to taste
1tbsp. butter

Preheat oven to 400 F. Mix Bisquick, parmesan, garlic mix. Place in paper bag or plastic bag and shake 3 to 4 pieces of chicken at a time in mixture. Melt butter in bottom of baking pan ant then place chicken in pan. Bake 30 minutes and turn over...bake another 15 minutes. Check center to see if done.
