Cinco de Mayo Dinner
We had a very nice Cinco de Mayo.
I just made tacos, but I made them from scratch, not the
tortillas, though.
I cut up onion and browned it and put a pound and an half of ground sirloin. I let that brown a little,
added about 4 tbsp. of chili powder, Mrs. Dash chipolte seasoning, salt, fresh ground multi colored pepper, and 2 minced cloves of garlic. I let it all cook on simmer while I…
cut up tomatoes, lettuce,yellow peppers, onion, openend up some fresh salsa from the store and good quality guacamole and sour cream to use as toppings for the tacos. I also had the large flour tortillas warming in the oven in tin foil.
Served everything with Ice Tea and threw in some white taco chips…..I can tell you we are all stuffed.

Hi Mom! I made tacos too. Not from scratch though. I used ground chuck 90%/10%; 1 can refried beans; 8 oz. sharp cheddar cheese; 1 packet of Old El Paso mild taco seasoning. I brown the meat really good but not too brown (adding some salt, pepper and paprika); then I add the beans and mix in well once its evenly mixed add the season pack & 2/3 cup of water and stir well. I cover it put it on low for about 10 mins. and stir every few minutes so its does not burn. I then take the cheese (8oz.) and stir it in and cook about 5 more min. I use small soft taco sized tortillas. I garnish it w/more sharp cheddar and taco sauce on the tortilla. You can add whatever toppings you like. Another tasty treat is layering mexican rice; meat & beans; and cheese on flour tortillas. They are quite tasty. Hint: don’t drain the fat from the meat unless you buy ground beef that has more than 15% fat, in this case drain part of the fat but not all. This adds a great flavor to the beans. Joey, Chuck and Damon love them!!
This sounds absolutely delicious. I miss not having the beans..no one here eats them. I have to make some for me:)
