Cruising in a Convertible with Blankets On!

OK, this week has been awful. My hubby did not get the help from a relative that we so desperately needed to start a franchise. He has not been able to secure a job since his mini-stroke in August.
I was pouting my way through dinner and my daughter (14 years) on what must have been a sugar high, comes up to me and says, “Hey Mom, take us (her, her sister, two of their girlfriends) cruising with the top down. We have our blankets all ready to go!”
I said, “No way!” ….thinking, I am waaaaaaaaay too depressed to do this. Go away, kid. She, of course, insisted, “Mom, it will be FUN!”
I was flipping home fries and thinking, remembering what it was like to be 14. A simple thing like riding in a convertible (red and hot) is such a sweet deal to a 14 year old. Well,I must admit…it’s a sweet thing to a 53 year old as well. I said, “After we eat and the eggs are done.” (The thing is after we go on our “joy ride,” we are gonna come home and they are gonna dye Easter Eggs.) So,we eat fried salmon patties ( I have included the recipe below for you) and then are off on our joy ride.
We get in the convertible. I ceremoniously put the top down for the first time this brand new season.
The girls are sooo excited and so am I. The blankets are secured as well as seat belts. We cruise up the alley to the top and on to Ridge Road. Kelly wants to see stars but it’s too cloudy. So,up goes the radio and we bop to some groovy or whatever the current word is, song. I am getting into this.
The curves increase and the convertible takes them nicely. Tina fidgets about the cold and tucks the cover in more securely,as I turn up the heat. WE are having a blast. They are loving it and for quite a few minutes I am forgetting an ongoing employment saga and just enjoying being a mom.
More curves are inevitable, I know, but tonight I took time to make memories and that is so important and wonderful with families.
Take some time tonight to go “Cruising in your convertible with the blankets on,” you will not be sorry for the ride will be very special and heartfelt.
And here is the Salmon Patty Recipe:
1 can of salmon
1/2 cup of breadcrumbs
1 tsp. of seasoned salt
1 egg 1/4 cup of milk
1 to 2 tbsp.of oil
Mix together salmon (remove bones) and breadcrumbs along with egg,salt and milk. Heat oil in fry pan. Form 3 inch patties and fry in oil until nice and crisp and brown. Serve with home fries and Ice Tea.
