What Will You Do for Memorial Day
Thursday, May 27th, 2010Will you have your first seasonal picnic or just eat inside? What do you have planned. I would love to try a Vegetarian Picnic. Any ideas?
Grilled Vegies
Cole Slaw
Green Salad
Grilled Acorn Squash
Steamed Broccoli
Fruit Salad
Sun Tea
You can grill some vegies:
Cut up peppers, zucchini, tomato, use onion chunks, any other vegie and place on skewers…grill till slightly brown.
Make a nice salad with greens, romaine, mustard greens, whatever you like, tomato, peppers, cucumbers.
Use vinegar and oil or some blood orange vinegar, a little salt, oregano, basil or whatever herb you like in your salad.
Steam some broccoli, add some light butter and almonds, yum.
Acorn squash…Cut it into four pieces, place in tin foil, sprinkle with honey and cinammon and raisins. Seal in foil and place on grill for 30 minutes…check and see if tender.
Do the same in foil with some corn on the cob…clean and seal in foil.
Make some cole slaw…shred carrots and red and green cabbage. Make a dressing of oil, vinegar, salt if you want, pepper, paprika, and honey.
Make a fruit salad for dessert: Bluberries, strawberries, blackberries, mixed together..add some yogurt, if you want.
Make some sun tea…Buy a sun container or an old gallon pickle jar, fill with water. Add tea bags…as many as you like..about 11 regular size. Set in the sun. When steeped, add lemon and lime and ice.
